Trim your meat of choice liberally of fat and cut into small pieces (about 1/2 inch square).
Season with Salt and Pepper (to taste) and set aside in a bowl.
Mince the garlic and jalapeno. Cut the onion. Set them aside in a separate bowl.
Rinse the red kidney beans in a strainer.
Heat some Extra Virgin Olive Oil in a large pot on the stove over medium heat.
Place the meat into the pot and cook until browned (about 2 minutes).
Then add the bowl of onions, garlic and Jalapeno. Cook for about 2 minutes stirring the mixture.
Add the kidney beans, chili powder, diced tomato, tomato sauce, and 1.5 cups of water. Stir all the ingredients together completely.
Lower heat to low (simmer) and cover the pot.
Leave pot on stove for roughly 90 -120 minutes. Stir from time to time.
When meat is tender the chili is done!
