Ingredients
Required Ingredients
  • 2 lbs Beef Steak, Stew Meat, Rib Eye, etc... Organic is best!
  • 5 garlic cloves
  • 1/3 Red Onion
  • 1 Jalapeno If you like it hotter, add more!
  • 14.5 oz Diced Tomatos in a can Organic is best
  • 3 tbsp Chili Powder
  • 30 oz Red Kidney Beans Organic is best
  • 8 oz Tomato Sause Organic is best
Optional Ingredients
  • Monterey Jack Cheese To shred over the chili when done
  • French Bread To dip in the chili 🙂

Instructions
Preparation
  1. Trim your meat of choice liberally of fat and cut into small pieces (about 1/2 inch square). Season with Salt and Pepper (to taste) and set aside in a bowl. Mince the garlic and jalapeno. Cut the onion. Set them aside in a separate bowl. Rinse the red kidney beans in a strainer.
Cooking
  1. Heat some Extra Virgin Olive Oil in a large pot on the stove over medium heat. Place the meat into the pot and cook until browned (about 2 minutes). Then add the bowl of onions, garlic and Jalapeno. Cook for about 2 minutes stirring the mixture. Add the kidney beans, chili powder, diced tomato, tomato sauce, and 1.5 cups of water. Stir all the ingredients together completely. Lower heat to low (simmer) and cover the pot.
  2. Leave pot on stove for roughly 90 -120 minutes. Stir from time to time. When meat is tender the chili is done!
Serving
  1. Serve in bowls covered with shredded cheese.
